Description
Location and Terroir
Located in the commune of Bué, near Sancerre, to the east of Bourges, in central France. This is where some of the most prestigious vineyards for the appellation such as “Chêne Marchand”, “Clos de la Poussie”, “Les Garennes”, and so on can be found.
There are two main soil types:
- Terres blanches, located on the Sancerre region’s westernmost hills (clay-limestone based)
- Caillottes, very stony, limestone rich soils
Winemaking
As soon as the grapes arrive at the winery, they are transferred to a pneumatic press. The grapes are pressed gently, over an extended period of time so as to extract all of the noble aromas and flavours from their skin and flesh. The juice is then transferred to thermo-regulated vats where it is allowed to settle. Once this is complete, the temperature of the vats is raised to initiate fermentation and allow the sugars to be transformed into alcohol.
Varieties
100% Sauvignon Blanc
Tasting / Character
Brilliant pale gold with subtle green highlights. The nose is intense, with good balance between freshness, fruit, vivacity and finesse that complement its minerality. Notes of citrus fruit and lime on the palate with a touch of mint.
